Southwest Quinoa Salad
Adapted from recipes I found on pinterest.

Ingredients:
1/2 cup quinoa, uncooked
15 oz can black beans, drained and rinsed
1/2 cup frozen corn kernels, thawed
1/3 cup red onion, finely chopped
2 small tomatoes, diced

I jalapeno pepper
1/3 cup chopped cilantro
1 small avocado, diced
Juice of a small lime

1/2 tsp cumin
Salt to taste
Directions:
1) Rinse and cook quinoa according to package directions. Allow to cool.
2) Combine remaining ingredients (except avocado) in a bowl.
3) Add cooled quinoa.
4) Allow to chill for a couple of hours as flavors blend.
5) Add diced avocado just before serving.

Having said that, I need an instagram intervention.It has gotten to the point that I have to leave my phone in another room.
Otherwise, I become a stalker or over-poster.
The first step is admitting you have a problem.
Thanks summer salad looks amazing!!!! I am a total over-poster on IG... You might have a problem if you post something and then delete it because you think I have posted too much today, I'll save that for tomorrow. ;)

ReplyDeleteI have an Insta addiction too. :) One thing that has helped me not to post too much is to take a picture outside of Instagram and edit in the PicTapGo app -- so I'm still taking pictures of my everyday but not sharing 500 of them a week. Lol.
