Artichoke and Salsa Quiche
½ cup salsa
1 cup artichoke hearts, quartered
¼ cup parmesan cheese, shredded
1 cup Monterey jack cheese, shredded
1 cup sharp cheddar cheese, shredded
8 large eggs
1 cup sour cream
Preheat oven to 350 degrees. Butter a 10 in quiche dish.
Spread salsa on the bottom of the dish. Distribute the chopped artichokes evenly over the salsa.
Sprinkle the cheeses over the artichokes. Blend eggs and sour cream until smooth (I used a blender). Pour the egg mixture over the artichoke/cheeses.
Bake uncovered for 30-40 minutes or until set.
